4 Delicious CBD Recipes to Whip Up Right Now

While a dropper of one of our CBD oils tastes delicious on its own, you can also get creative with your culinary skills and add CBD to your favourite eats. From brownies, to pancakes, to guacamole – there are so many ways to get baking with this popular compound. Not sure where to start? Here are five of our favourite recipes for cooking with CBD oil…

CBD Pancakes

1. Light and Fluffy CBD Pancakes

If you like a drizzle of lemon and a sprinkle of sugar on your crepes, the easiest way to make CBD pancakes is by adding the Bright Days CBD Oil Drops to your lemon juice. However, this juniper and lime-flavoured CBD oil also tastes zingy and zesty when whipped into your pancake mix. Follow this recipe for a light and fluffy sweet treat you can rustle up in just a few minutes.

Ingredients (serves 2)

  • 150g self-raising flour
  • ½ tsp baking powder
  • 1 large egg or vegan egg replacement
  • 150ml milk of choice
  • ½ tbsp maple syrup, plus more to serve
  • 1-2 tbsp butter or vegan butter, plus more to serve
  • 2ml Bright Days CBD Oil Drops

Method

1.) In a large mixing bowl, add the flour, baking powder and a pinch of salt. Use a whisk to combine and slightly aerate the flour. Form a well in the middle of the bowl and crack in your egg. Then pour the milk, maple syrup and add in the CBD oil. Whisk once again until you form a thick, smooth batter.

2.) Over a medium heat, place a non-stick frying pan and let it heat up. Add 1 tablespoon of butter and brush around the pan. Pour any excess butter into a small bowl. (You will only want a small film on the base of the pan or the pancakes will crisp at the edges.)

3.) Add 2-3 tablespoons of pancake batter to the pan. This should form small to medium pancakes, about 10cm wide. Do this in batches to ensure the pancakes do not stick together while cooking. Fry for 2-3 minutes, until bubbles rise to the surface and the sides look set. Flip (with the pan if you are that skilled!) and cook for another 1-2 minutes until the pancakes are golden on both sides.

4.) Keep warm in a low oven or on a warm plate while you cook the rest. Repeat with the remaining butter and mixture until all the batter is used up. Serve in stacks with gushing of maple syrup and a knob of butter.

Chocolate Mint CBD Brownie

2. Vegan Chocolate Mint CBD Brownies

Enjoy a hint of mint in your chocolate brownies by adding the Night Time CBD Oil Drops into this easy bake that comes courtesy of Tastemade. These brownies are not just for bedtime; they can be enjoyed any time you’re craving something sweet. (Although, let’s face it: that’s usually after dinner, when you’re chilling on the sofa.) Follow the steps below to cook up a batch with a sweet peppermint twist.

Ingredients (makes 9 vegan CBD brownies)

  • 240g ground almonds
  • 50g cocoa powder
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 50g coconut oil, melted and cooled to room temperature
  • 180g coconut sugar
  • 1 bottle of 600mg Night Time CBD Oil Drops
  • 2 eggs
  • 120ml plant based milk
  • 2 tsp vanilla extract
  • 200g dark chocolate chips

Method

1.) Preheat the oven to 160C/140C fan. Line a 20 x 20cm brownie tray with parchment paper and grease.

2.) In a large bowl, mix together all the dry ingredients and in a second bowl, whisk together the wet ingredients.

3.) Pour the wet ingredients into the dry ingredients and stir to combine. Add in ¾ of the chocolate chips and stir to combine.

4.) Pour the brownie batter into the prepared brownie tray, and use a spatula to even out the top. Sprinkle the remaining chocolate chips over the top of the brownie and bake for 30 minutes. Remove from the oven and allow to cool to room temperature. Use the parchment paper to lift the cooled brownies out of the pan, then cut into 9 and serve.

CBD Cookies

3. Small Batch CBD Cookies

Bake up four chocolate chip and CBD cookies with Chatelaine’s small batch recipe, which we’ve updated with our Night Time CBD Oil Drops for a tingle of peppermint. (Mint chocolate chip cookies? Yes, please.)

Ingredients

  • 2 tbsp unsalted butter , softened
  • 50g packed brown sugar
  • 1 large egg yolk
  • 1/2 tsp vanilla
  • 1ml Night Time CBD Oil Drops (optional)
  • 66g all-purpose flour
  • 1/8 tsp baking soda
  • 1/8 tsp salt
  • 3 tbsp dark chocolate chips
  • 3 tbsp finely chopped Brazil nuts
  • 3 tbsp pumpkin seeds
  • 1 tbsp flaxseed

Method

1.) Position rack in centre of oven, then preheat to 325F/160C.

2.) Mix butter with sugar in a medium bowl until creamy. Stir in egg yolk, vanilla and CBD oil. Stir in flour, baking soda and salt until just combined. Stir in chocolate chips, nuts, pumpkin seeds and flaxseeds.

3.) Divide batter into 4 equal portions. Gently roll each into a ball and arrange, 3 inches apart, on a parchment-lined baking sheet. (Cookies will spread as they bake.)

4.) Bake until the cookies are golden around the edges, 15 to 18 min. Let cookies stand on the sheet for 2 minutes, then transfer to a rack to cool completely or serve warm.

CBD guacamole

4. CBD Infused Guacamole

Nothing beats a homemade guacamole – except a homemade guacamole with CBD. Serve up this recipe by Yummiest Food next time you’re serving chips and dip for six. Ingredients (serves 6)

  • 3 ripe avocados
  • 1-2 fresh limes, juiced
  • 1 Roma tomato, diced (canned diced tomatoes will work, but fresh is better)
  • 50g cilantro, finely chopped
  • 1 garlic clove, minced
  • ½ tsp salt, or to taste
  • ¼ tsp pepper, or to taste
  • 1 tsp cumin, or to taste
  • 2-4 tbsp diced onion
  • 1 green chilli (fresh or canned) or jalapeno pepper (optional for spice)
  • 1.5ml Bright Days CBD Oil Drops

Method

1.) Using a mortar and pestle (a fork or spoon and bowl will also do the trick), mash the avocados together until you have a smooth texture. Small lumps are fine. Add the tomatoes, onions, cilantro and garlic, and mix well.

2.) Mix in the CBD oil, and add the lime juice, salt, pepper, and cumin as directed or to taste. Remember to mix very well so the CBD oil is thoroughly and evenly distributed throughout the mixture.

3.) For best results, refrigerate for at least an hour or up to overnight before serving. Serve with fresh tortilla chips, and enjoy.
